Chocolate Chip Cookie Dough Cupcakes

Last spring my friend called me to place an order for his daughter's graduation party. We set up a conference call with to plan the treats for the party. As we talked I asked the graduate, "What kind of cake do you like?" "Chocolate chip cookies and cookie dough!"

We settled on chocolate peanut butter cupcakes, red velvet with cream cheese frosting and on chocolate chip cookie dough cupcakes. I had never made the last variety before but I promised to look up some recipes. The next evening my friend texted me a perfect recipe. We had a plan.

How to make chocolate chip cookie dough cupcakes

  1. First, make the chocolate cupcake. The recipe is great to work with. It says you don't even need a mixer, but still I chose to use one. While the cupcakes are baking, make the filling and make sure to let it set up in the fridge if you need to. When your cupcakes are finished baking, let them cool long enough that you can cut out the centers of the cupcakes. It suggests using a cupcake corer, but I have always had better luck with a knife.

  2. When your cupcakes are ready for filling, it is time to FILL them.

  3. The frosting is the most interesting thing about these cupcakes. It truly does taste like chocolate chip cookie dough!! I was surprised that it had flour in it. I think that was key for making the frosting taste like you were eating extra cookie dough. As someone who bakes chocolate chip cookies weekly for a local grocery/cafe in my town, I eat more than my fair share of cookie dough to know!!

    I suggest adding the flour gradually and maybe stopping a little bit early. My only challenge with this dough was that it was tricky to pipe. If you look at the pictures on The Cake Blog, you'll see that she didn't pipe her frosting, instead opting for a neat little pile of frosting on top of the cupcake. I think that the thickness could be the reason she chose that method, along with the dough look.

The graduate would be attending Kings College in the fall of 2018 so we went with a cookie cake and other cupcakes with the Kings College logos on them.
