Cornell themed Sprinkle Cake

I admit that I don't stay on top of cake trends as much as I should. It is because I like to do things that are MY idea instead of copying what is trending on the internet. But, I can usually count on my customers to let me know what the trends are and to ask for one of them!! I learn them when I must for an order. Michelle emailed me telling me that her daughter Maile follows The Flour Shop on Instagram and asked if I could bake her a sprinkle cake for her 20th birthday.

It is for a college birthday

There's really nothing more fun than baking for college birthdays! I remember the college days when a care package would arrive and brighten my day. I love arriving and seeing the student's face upon learning that mom and dad have sent cupcakes or cake to help celebrate their birthday away from home.

A Cornell Themed Sprinkle Cake

We decided to go with a 6" sprinkle cake and vegan funfetti cupcakes for Maile to celebrate with her friends. We'd pull in the Cornell colors with both the cake and the sprinkles!

I alternated between red and white layers to keep the cake Cornell themed. Starting on the third layer, I cut out a small circle for the sprinkles to go in. I continued to layer the cake filling the layers with vanilla cookies and cream filling. With two layers remaining, it is time to add the sprinkles to the middle of the cake! Once the sprinkles have been added, add the last two layers to the top of the cake that aren’t hollowed out.

Vegan Funfetti Cupcakes

In addition to the cake, the customer decided to have a few vegan cupcakes available for the celebration. We thought it would be fun to have them be in the funfetti theme. I found a vegan vanilla Funfetti vanilla cupcake recipe to use for this on the Minimalist Baker. I love this site. She has a great many recipes that I use for my vegan and gluten-free baking. Some of them I have modified to fit my needs and others I use straight as is. A note about these cupcakes. They are similar to every other vegan vanilla cupcake that I've tried - either from online recipes or trying to create my own. They don't have the perfect pillowy top that I want. They are delicious and the batter looks lovely when it starts but it doesn't rise into that nice center.

For the Cornell theme I used the silver, red and white sprinkles that I used for this cake. The next time I do this I'll stick with red and white. The silver came off the edges and gave a black look. It wasn't bad, but didn't add value either.
