Volleyball Cookies

These were to help celebrate the end of the season for the Trumansburg volleyball team! The team won the IAC large school championships!

Making the cookies

A volleyball is large, so my largest circle cutter (3”) seemed inadequate. Instead of buying a cutter, I decided to try out the cookie stencil technique that I will be using for ballet shoe cookies in a few weeks. I made a 4.5” circle stencil using thick plastic and used it to trace the cookies for the volleyballs.

I made the dough, rolled it out, cut the cookies, baked them and added finishing touches. These giant cookies are buttery, sweet and a delicious treat after dinner!

For the volleyballs, I used a combination of royal icing and rolled fondant. The icing helped the fondant adhere to the cookie, and the fondant gave a lovely smooth surface for drawing the volleyball details on the cake. When the volleyballs were all ready, and the fondant was dry to the touch, I used edible marker to draw the volleyball lines on the cookies. The result: a beautiful tray of large cookies for the team to devour!
